Sharpening
Draw the cutting edge of the knife across the sharpening rod from the bolster to the blade tip. For our knives manufactured using the ”Solingen-Dry-Fine-Grinding®“ process (hand-sharpening method used in Solingen), 2 to 3 strokes on each side of the blade are perfectly sufficient. Try to use the whole length of the ceramic rod. The cutting edge should be placed on the ceramic rod at an acute angle. You will hear whether the cutting edge is in proper contact with the rod through a gentle, sandy sound and you will feel how the blade “engages”. The sound of the cutting edge contacting the rod may neither be scratchy nor overly smooth. Do not use too much force – it is better to repeat the sharpening process in order to achieve the desired result.
