Hechtsäbels stable - Portioning knife

The second knife, a portioning knife with a sharp point, which cuts the meat in advance. It is a special version of our "Hechtsäbels" made of carbon steel. Due to the harder working conditions for this knife, it is a little more stable in the blade and keeps its sharpness due to the special cup grinding.
